Spiced Date Coconut Oatmeal
It's October, so I'm fully embracing everything autumnal. This includes one of my favorite cozy breakfasts: oatmeal! A recipe so adaptable it could be made with just two ingredients, and it has endless permutations of flavors that can be added in.
I made this batch with dates, coconut cream, cardamom, cinnamon, vanilla, and topped it with butter and my vanilla coconut sugar syrup. Maple syrup also tastes amazing on it. I feel like oatmeal is sometimes a hit or miss, but this one was so good I had to post the recipe. This would also be perfect for suhoor during Ramadan!
Spiced Date Coconut Oatmeal
Ingredients:
1.5 c rolled oats
3 c water
1/3 c coconut cream
4-6 dates
1 tsp salt
1/2 tsp cardamom
1 tsp cinnamon
Butter (for topping)
Maple syrup (for topping)
Instructions:
Step 1: Toast the oats for a minute or so in a medium saucepan until fragrant.
Step 2: Add in the water & salt.
Step 3: When water is near boiling, add in the coconut cream, dates, cinnamon, and cardamom.
Step 4: Cook on low heat until the consistency is to your preference (I did 10-12 minutes, I prefer things on the thicker side)
Step 5: Serve in a beautiful bowl and top with butter, maple syrup, and more cinnamon & cardamom.
