Skinny Stuffed Dates

If you're in the mood for a delightful treat that blends the caramel-y sweetness of dates with a variety of delicious fillings, these stuffed dates are just what you need. I've chosen to fill these with peanut butter, Nutella, and goat cheese, but any nut butter works well in this format. Some of my other favorites are pistachio, almond, and cashew butter. I enjoy making a simple version of these for myself at home, but if you're entertaining, you can adapt this recipe with some of the tips at the bottom of this post for added flare.

Here are some adaptations I found on Instagram that look delicious!

 

 

 

Ingredients:

  • Medjool dates (about 12 pieces, 4 per spread)
  • Peanut butter
  • Nutella (or any chocolate hazelnut spread)
  • Soft goat cheese

Instructions 

Prepare the Dates: Carefully slice each Medjool date lengthwise on one side to create a small pocket. Be gentle to avoid cutting all the way through.

Fill the Dates:

1. Peanut Butter: Take a small spoonful of peanut butter and stuff it into the center of each date. Smooth the peanut butter gently with the back of the spoon.

2. Nutella: For a decadent chocolatey treat, spoon Nutella into the center of the remaining dates. Spread it evenly to ensure every bite is filled with creamy goodness.

3. Goat Cheese: Finally, for a savory twist, fill the remaining dates with soft goat cheese. The tanginess of the goat cheese pairs perfectly with the natural sweetness of the dates.

Serve and Enjoy! Arrange the stuffed dates on a serving platter, mixing up the varieties for a colorful presentation. They can be enjoyed immediately or chilled in the refrigerator for a firmer texture.

Tips:

- Choosing Dates: Opt for medjool dates for their soft texture and sweetness. If unavailable, any large, soft variety will work well. I used sultan dates, which are sweeter than medjool but less firm.

- Filling Options: Feel free to experiment with other fillings like cream cheese, mascarpone, or even a sprinkle of sea salt for added complexity.

- Garnish Ideas: Consider garnishing with chopped nuts, a drizzle of honey, or a sprinkle of cocoa powder for extra flair.

- If you feel like taking things up a notch, you could dip each date in chocolate and sprinkle with nuts and flaky sea salt!

These stuffed dates are perfect for parties, afternoon snacks, or simply satisfying a sweet tooth. Each variation offers a unique flavor experience, making them a versatile and irresistible middle eastern treat!
