Girl Dinner = Mana'ish + Labne + Pomegranate Soda

Dim lights, relaxed vibes. There’s something so satisfying about a girl dinner spread—simple, flavorful, and just the right amount of indulgent. Enter mana’ish, the Lebanese za'atar flatbread that’s crispy, herby, and perfect with a side of cool, creamy labne topped with extra virgin olive oil and sprinkled with even more za'atar. 

 

 

 

 

 

 

 

 

 

The malt soda is an alcohol-free beer popular in Arab countries and households--I generally prefer the Barbican brand ones, but this one from Bavaria was good too.

 

 

 

 

 

 

 

 

 

 

 

 

I use my pita recipe for mana'ish and add a mix of za'atar and olive oil on top before baking. Here’s how to make it at home yourself!

Mana’ish

Makes 4 small flatbreads

Ingredients


- 2 cups all-purpose flour (or bread flour)  
- 1 tsp instant yeast  
- 1 tsp sugar  
- ½ tsp salt  
- ¾ cup warm water  
- 2 tbsp olive oil  
- ¼ cup za’atar spice blend  
- ¼ cup extra virgin olive oil (for topping)  

Instructions


1. Make the dough: Mix flour, yeast, sugar, and salt. Add warm water and olive oil, kneading until smooth (about 5-7 mins). Cover and let rise for 1 hour.  


2. Prep za’atar oil: Mix za’atar with olive oil to form a spreadable paste.  


3. Shape & bake: Divide dough into 4 balls, roll out into thin circles using a rolling pin, and spread za’atar oil on top. Bake at 500°F for 5-6 mins until golden. I've made this recipe in multiple ovens across the country, and it depends where you're at, so keep a close eye on them.

 

Serve warm with labne, olives, and fresh veggies for the ultimate girl dinner. Bon appétit!
