Tofu Cucumber Salad With Peanut Sauce

I was a vegan for 3 years, and during that time, I built up a hefty repertoire of tofu recipes. This one comes together in minutes with the main components being cold tofu, cucumber, and a peanut soy sauce. It's perfect for when you're craving something salty and crunchy!

Ingredients

1 package firm or soft tofu

1 cucumber

1 nori sheet

1 tbsp sesame seeds

1 tsp toasted sesame oil

Black pepper (to taste)

Sriracha sauce

Peanut soy sauce

 

Instructions

Step 1: Drain the tofu and pat dry with a paper towel. Cut into bite-sized cubes--I do 3 cuts length-wise and 4 horizontal, then cut each segment in half for perfect near-perfect cubes.

Step 2: Remove the skin from the cucumber and bias cut into thin pieces.

Step 3: Layer the cucumber on the bottom of a plate and place the tofu on top.

Step 4: Shred up a sheet of nori and sprinkle on top. Add on the sesame seeds, sriracha sauce, peanut soy sauce, toasted sesame oil, and black pepper.
