Antioxidant-Rich Blueberry Pie Smoothie

Berries--I can't get enough of them. They're literally nature's skittles. I eat blueberries every day because of their high antioxidant content and cognitive benefits, and also because I have an affinity for purple foods (don't ask).

One of the easiest ways I incorporate berries into my diet is through an afternoon smoothie. This blueberry pie smoothie is balanced with fiber, carbs, and healthy fats, so it keeps you feeling full for hours. I make mine in my single-serve Ninja blender cup, so this is the recipe for a single serving.

Recipe

Ingredients

~1.5 cups frozen blueberries

1/4 cup oats

~3/4 cup almond milk

1-2 tbsp almond butter (peanut butter also works)

1 tsp raw honey or maple syrup

1/2 tsp cinnamon

1/8 tsp ground cardamom

Instructions

Blend until very smooth, longer than you think you need to. I prefer thicker smoothies, so that's how I make mine, but all the proportions in this recipe can be adjusted to your personal preferences.
